Wine Cap Mushroom Cultivation on Fermented Substrate

A field guide to site preparation, agricultural residue fermentation, layered spawning, crop management and market-stage harvest.

Wine cap mushroom, Stropharia rugosoannulata, is also known as king stropharia and garden giant. The Chinese source article calls it Chisongrong and Daqiugaigu. Its robust texture, mild flavor and ability to convert lignocellulosic residues make it suitable for outdoor and protected bed cultivation.

Scope of this guideThis is an English technical adaptation of a regional Beijing protocol. Dates and operating targets reflect the source production system and must be adjusted for local climate, strain, substrate and food safety rules.

Select the site and prepare the beds

Wine cap cultivation can be established beneath open woodland or in an outdoor plot. Choose a warm, sheltered and partially shaded location with convenient water access and transport. Avoid dense shade directly beneath large trees because insufficient light and strong root competition can restrict bed performance.

  1. Remove the upper layer of topsoil and reserve it for casing.
  2. Form level beds approximately 10 cm high and 50 to 60 cm wide.
  3. Leave about 40 cm between beds for access, drainage and crop inspection.
  4. Confirm that the site drains after irrigation and heavy rain.
  5. Use only sanitation and pest management inputs currently registered for the crop and location.
Soil treatment cautionThe historical source mentions a specific insecticide and repeated lime applications. This edition does not reproduce that recipe. Use an approved site sanitation plan based on local labels, soil conditions, worker protection requirements and residue limits.

Prepare the fermented substrate

The Miyun protocol uses locally available agricultural and forestry residues, including chipped chestnut or jujube prunings, corn stalks, corncobs, rice straw and grain hulls. Materials should be clean, free of visible mold and foreign matter, and reduced to a particle size that mixes evenly while retaining useful bed porosity.

Current research supports the broad use of straw, sawdust, corncob and other agricultural residues for this lignocellulose-degrading species, but formulation performance varies by strain and material chemistry. Treat the four source formulas as pilot options rather than interchangeable guarantees.

Fermentation routine

  1. Mix the chopped and milled materials uniformly on a clean preparation surface.
  2. Add water while forming the pile and monitor the core temperature.
  3. When the substrate reaches approximately 60 to 70°C, turn the pile from the inside outward and from the top downward.
  4. Complete four to five turns during the fermentation period to reduce cold zones and uneven conditioning.
  5. Before sowing, confirm a moisture content of approximately 50 to 60%, an even texture and no strong anaerobic odor.

Temperature alone does not validate hygiene. Record pile dimensions, material lot, initial moisture, core temperature at multiple locations, turning dates and the final condition. Excessively wet, compacted or anaerobic material should not be used until the cause has been corrected.

Schedule and complete sowing

In the Miyun outdoor system, sowing is commonly scheduled from early August to early September, with first fruiting around early October and a larger crop the following April. Greenhouse production is commonly established from mid to late November through early December to target the period before the Spring Festival. These dates are regional examples, not universal calendars.

  1. Place a 10 cm layer of conditioned substrate on the prepared bed.
  2. Break authenticated spawn into pieces approximately the size of a walnut and distribute them evenly.
  3. Add a second substrate layer approximately 10 cm deep.
  4. Apply another portion of spawn so it contacts the conditioned material across the bed.
  5. Shape a gently rounded bed and cover it with 2 to 3 cm of reserved topsoil.

Use spawn from a traceable supplier and record strain, production date, batch number and storage history. Establish a small validation area whenever the substrate formula, spawn source or production season changes.

Manage spawn run by moisture and temperature

The source gives a preferred crop growth range of 15 to 25°C. It reports fruiting body formation and development across 4 to 30°C, and mycelial growth across 5 to 34°C with a preferred range of 12 to 25°C. Growth slows below 12°C, while temperatures above 35°C can stop growth and damage the mycelium.

Research on wine cap stipe cracking shows that low relative humidity can materially reduce market quality. In that study, cracking appeared at 60% RH or below and was not observed at 62% RH or above under the reported conditions. Use this as evidence for avoiding dry fruiting environments, not as a universal humidity setpoint.

Water management ruleDo not irrigate by calendar alone. Check substrate moisture, casing moisture, mycelial position and weather. Early overwatering can suppress mycelial growth, while insufficient pre-wetting can slow colonization.

Harvest and market handling

The source reports approximately four to nine days from visible primordia to maturity. Cool conditions slow development and often produce thicker mushrooms that open less readily. High temperatures may produce smaller, less regular fruiting bodies and faster cap opening.

A crop can produce three to four flushes, with the second flush commonly delivering the best yield and quality in the source system. The interval between flushes is generally about 15 to 25 days.

Harvest standard

Harvest while the cap remains bell shaped and the partial veil is intact or only beginning to split. The latest acceptable stage described by the source has the cap margin still rolled inward and the veil turning grayish white. Because texture and appearance change quickly with maturity, separate grades at harvest.

  1. Hold the lower stipe gently between the thumb and fingers.
  2. Twist slightly until the fruiting body loosens, then lift upward.
  3. Avoid disturbing adjacent pins and young mushrooms.
  4. Trim the soil covered base promptly.
  5. Remove residual casing and substrate, grade by size and quality, and pack in clean ventilated crates.

Keep fresh mushrooms in a cool, ventilated location and move unsold product into an appropriate cold chain on the day of harvest. Postharvest studies confirm that wine cap quality changes rapidly and that temperature and package atmosphere materially affect browning, softening and storage life. Any preservation treatment must be validated for food contact and market requirements. Product not suitable for immediate fresh sale may be directed to a validated processing route such as canning.

Production records and quality release

  • Record site, bed dimensions, drainage condition and casing source.
  • Document every substrate ingredient, supplier, lot, particle size and dry weight ratio.
  • Log pile temperature, moisture, turning and odor observations during fermentation.
  • Track spawn identity, inoculation rate, sowing date and bed temperature twice daily during early spawn run.
  • Record irrigation, emergence, flush dates, harvest maturity, grade and yield.
  • Reject material with unexplained contamination, chemical odor, foreign matter or temperature damage.
